Liberated Specialty Foods was founded in early 2015 in the quiet countryside outside of the town of Madison, Alabama by Stacey Schlaman, a mother of two.
A longtime advocate of avoiding gluten for a number of digestive and autoimmune disorders, and eating Paleo to improve physical fitness, Stacey more recently had learned about the value of eliminating most starches and sugars, through the writings of Elaine Gottschall in her book Breaking the Vicious Cycle, and Dr. Natasha Campbell-McBride, MD in her book Gut and Psychology Syndrome.
